Easy 3 piece Roast:
You only need 3 things: a roast, Tony Chachere's, and frozen stew veggies.
I breaded the roast in coconut flour (optional) and Tony Chachere's Creole seasoning. Then I braised the outside of the roast in my dutch oven.
I buy the cheap frozen veggies from Reasor's (Shur Fine Brand)
Once the beef has braised, I add the frozen veggies and cover with water.
Simmer 3-4 hours on low- med. low until beef pulls apart with a fork.
I used two bags of veggies for this because it was a large roast. We had plenty of leftovers and everyone in the house enjoyed it. Even my picky toddler! You can use fresh veggies if you would like, but this saves money and time because the packs of veggies cost about $1 each. Then you also don't have to chop anything. This is great for a Saturday afternoon when you have guests over and want something easy to throw together beforehand that you won't have to babysit. It also freezes well for later use if you don't want to eat it all right now. We are always making big batches and freezing in those stackable Glad food storage systems.
