Caveman Candy!!

Paleo almond joy. Oh.  Em. Ghee... Instructions below. Super freakin easy!!




First, I shredded my own coconut. I can't seem to find unsweetened, shredded coconut anywhere. If you can find it, more power to you!! I mixed in honey. Pure, raw, local honey is the best option. I mixed in about a tablespoon for a cup and a half of shavings. You can add more or less based on your preferences. 


Here it is all mixed up!! Yummy!


I used sliced almonds, but you could use whole if you'd like. I melt the dark chocolate in the microwave. I buy 85% coco and break it up into pieces. I start with one minute, but keep an eye on it. If it's not done after a minute, I add 30 seconds at a time until its all melty and goopy. 


Roll the coconut into balls and top with almonds. I made mine just a bit smaller than a ping pong ball. 


Coat the balls with the dark chocolate. I scoop and drizzle, then smooth it out with the spatula.

I pop them in the freezer for 10-15 minutes, then flip them over and put chocolate on the bottom. 

Viola! You now have caveman candy!! Enjoy! Let me know what you guys think in the comments!
