So the whole 30 diet has been fun and I feel great, however, I'm two weeks in and we have already spent over a months worth of budget on our food. We snack on fruit all the time. There was a big bird flu epidemic, so eggs have skyrocketed. We have our own hens, but they aren't laying quite yet. Meat is always expensive. Especially if you want to buy organic like they suggest. So what is a mom to do?
I'm trying to feed everyone healthy, but I can't keep going at this rate.
That being said; I will be posting some recipes for you guys on a budget to stay within the guidelines.
I'm southern, so today's recipe reflects that with Southern fried pork steaks and cauliflower mash. Pork cube steaks were on sale for less than $2/lb this week, so that's what we bought.
For the pork:
I used a skillet on medium with coconut oil an inch deep.
I made a mixture of coconut flour and creole seasoning (check ingredients) to bread the steaks. (About 1 tablespoon seasonings per 1 cup flour)
I breaded them lightly by not dipping in an egg mixture. I just dusted both sides with it.
I fried until golden on each side, adding sliced onions and mushrooms to the skillet as I went along.
For the cauliflower mash:
The biggest time consumer here is boiling it. You boil your cauliflower until soft (about 20 minutes or so) I put a tablespoon of minced garlic in it while it's boiling to give some flavor.
When it's done boiling, you will strain it in a colander before putting it in a blender or food processor.
I used about a tablespoon of ghee for two heads of cauliflower. If you like it really buttery, you can add more. You will also want to add salt and pepper at this point along with a dollop of coconut cream. And I like to add parsley at this point for color.
Blend until smooth.
