I start out by cooking the bacon in a pan. I use cast iron, but you can cook it in whatever pan you have.
While the bacon is browning, I pre-heat the oven to 350 and begin to slice the sweet potatoes. I try to pick out the fattest sweet potato I can find, so I have plenty of room for my sandwich. Slice it in 1/2-3/4 inch slices. I have a mandolin slicer, but I think that would be too thin to hold up to bacon and eggs piled on top.
I take a baking sheet and line it with foil and pour some melted coconut oil onto it. I lay the sweet potato slices out and swirl them around, then flip them so they get oil on both sides, then sprinkle with salt and pop it in the oven.
While those are baking for 20 mins or so, I start the eggs, I prefer a nonstick pan for those and I let them cook until the edges get bubbly (see photo) so that they will flip in big chunks. This way, the eggs aren't crumbling all over the place while you eat a sandwich.
As soon as the eggs and bacon are done, I like to wilt the greens in the bacon grease. It only takes a minute or so, and they go nicely on the sandwich and add some color to it. I like to buy a kale and baby spinach mix, but you can just choose to use baby spinach if you prefer.
I pile mine:
Bottom bun, bacon, egg, greens, top bun.
But you can do any order you'd like. Have fun and happy eating!

1 fat sweet potato
3-4 eggs
1 package bacon
A couple tablespoons coconut oil
Baby spinach (kale optional)
